Eggs 3 Ways

Here are three ways to brighten up you mornings!

Herbed Sunny Side Up

Ingredients:
  • 2 eggs
  • 2 tbsp. spring onions
  • 2 tbsp. shredded mozzarella
  • Pinch of salt & pepper
  • Oil for frying
  • 2 slices toasted bread
Procedure:
  1. Separate egg yolks from egg whites in three bowls (2 for egg yolks, 1 for egg whites).
  2. In a bowl, mix egg whites with spring onions, mozzarella, salt, & pepper.
  3. In a nonstick pan, add oil & add half of the egg white mixture.
  4. Gently put the yolk on the center of the egg white & cook.
  5. Repeat the same procedure for the remaining egg white & yolk.
  6. Sprinkle eggs with salt & pepper. Serve with toast.

Poached Style Egg

Ingredients:
  • 2 eggs
  • 4 pieces fresh basil leaves, finely chopped
  • 2 tbsp. grated cheddar
  • 2 slices toasted bread
  • 1 avocado, sliced
  • 1 tsp. salt
  • 1 tsp. pepper
  • Cling wrap (Note: Use microwave-safe cling wrap only)
Procedure:
  1. Line a ramekin or a small bowl with cling wrap. Crack one egg in each ramekin or small bowl.
  2. Divide cheddar and basil among the eggs.
  3. Microwave eggs for 20-30 seconds. (Note: make sure to not overcook the eggs)
  4. Assemble toasted bread and avocado slices. Set aside.
  5. Remove cling wrap from eggs. Sprinkle eggs with salt and pepper then serve with avocado toast.

Unicorn Sunny Side Up

Ingredients:
  • 1 cup purple cabbage
  • ½ tsp. lemon juice
  • 2 eggs
  • Himalayan pink salt
  • Cooking spray
Procedure:
  1. Using a food processor, pulse in purple cabbage until it becomes a fine mulch.
  2. Strain cabbage pulp and press mulch with a spoon to release purple cabbage juice.
  3. Separate egg yolks from egg whites in 3 bowls (2 bowls for each egg yolk and 1 bowl for whites). Set egg yolks aside.
  4. Divide whites into two. Spoon in 1tbsp purple cabbage juice into both egg whites. Add ½ tsp lemon juice in 1 egg white. Whisk both egg whites until desired colors are achieved.
  5. Spray pan with cooking spray. Add one colored egg white and keep it to one side of the pan.
  6. Add the other egg white on the vacant space in the pan. Add respective egg yolks in each colored egg white. Sprinkle with pink salt.
  7. Remove from heat once egg yolks are cooked. Serve with bacon or ham, and bread.
