Berry Parfait

The secret is making sure the individual ingredients are ready and on stand by. All you have to do really is put various ingredients in a glass, layer by layer.

Berry Parfait with Coconut Whipped Cream

Ingredients:
  • ½ cup heavy cream
  • ½ cup coconut cream
  • 2 tbps icing sugar
  • Vanilla extract
  • Granola
  • Strawberry
  • Blueberries
  • ¼ cup hazelnuts
  • ¼ cup coconut shavings
  • Caramel sauce or honey
Procedure:
  1. Whisk heavy cream with icing sugar. Fold and cut coconut cream and vanilla extract.
  2. Cut strawberries in half. Crush hazelnuts.
  3. Mix strawberries and blueberries.
  4. To assemble parfait, lay berries first followed by granola, then sprinkle a little hazelnut, a little coconut shaving, and top with cream, repeat until you reach the top of the glass
  5. Pour a small amount of caramel on top before serving.

Herbed Sunny Side Up

Ingredients:
  • 2 eggs
  • 2 tbsp. spring onions
  • 2 tbsp. shredded mozzarella
  • Pinch of salt & pepper
  • Oil for frying
  • 2 slices toasted bread
Procedure:
  1. Separate egg yolks from egg whites in three bowls (2 for egg yolks, 1 for egg whites).
  2. In a bowl, mix egg whites with spring onions, mozzarella, salt, & pepper.
  3. In a nonstick pan, add oil & add half of the egg white mixture.
  4. Gently put the yolk on the center of the egg white & cook.
  5. Repeat the same procedure for the remaining egg white & yolk.
  6. Sprinkle eggs with salt & pepper. Serve with toast.
